Quick Carrot Salads

Quick, easy, tasty carrot salads to pair with any meal
Carrot Salad
- 1 cup grated carrots
- 2 green onions, diced
- 1 cup lettuce, shredded
- 1/4 lb feta cheese
- 1/4 cup pine nuts
- 1/4 cup black olives
Dressing:
- 1/4 cup olive oil
- juice of 1/2 lemon
- dash of vinegar
- fresh basil, tarragon and mint (about 1 T each)
1. Combine salad ingredients.
2. Combine dressing ingredients, add to salad and toss lightly.
Serves 4
Caper Mint Slaw
- 2 cup cabbage, sliced or grated
- 1 carrot, grated
- 5 pepperoncinis, chopped
- ¼ cup parsley, chopped
- ¼ cup mint, chopped
- 1 T capers
- 2 T mayonnaise
- 3 T rice vinegar
- ¼ cup virgin olive oil
Slice cabbage very thin, grate carrot, and chop pepperoncini
Mix other ingredients in large bowl, then add grated vegetables. Toss & serve
