Corn Tikki Tacos

An Indian snack takes on a Mexican tradition

 

Filling:

  • 1 cup frozen corn kernels
  • 1 small can, green chilies, or 3-4 fresh green chilies
  • 1/2 cup raisins
  • 1" inch fresh ginger, minced
  • 1/2 t ground cumin
  • 1/2  t cinnamon
  • 1/4 t ground cloves
  • 1/4 t cayenne
  • dash nutmeg
  • 1/2 cup peanuts or cashews
  • 1 t sugar
  • 1 T grated coconut. 

 

2 dozen taco shells

 

condiments:

  • 1 cup grated coconut
  • 1 cup raisins
  • 1 cup yogurt
  • 2-3 large tomatoes, chopped
  • 1 head iceburg lettuce, sliced thin and chopped.
  • taco sauce

 

1. Combine all the ingredients for the Tikki filling, and blend in a food

processor or blender or food mill until coarse pureed.

 

2. Heat 3 Tbs oil in a sauce pan, then add Tikki mixture and stir over

high heat for 2-3 minutes.  Reduce heat to simmer, and cook a further 15

minutes, stirring occasionally.

 

3. Prepare bowls of condiments

 

4. Each person constructs their tacos by placing some of the tikki

mixture in a taco shell, adding condiments and taco sauce to

taste.
